Cinco de Mayo!

Here's an inside look at our Cinco de Mayo family night we had on Monday. Patrick had the fun idea that we could have a fiesta night for FHE and I'm always up for Mexican food. So, I made Dandelion Mama's sour cream enchiladas, Peg's tomato guacamole, black beans and pina colada smoothies. Yummy! The enchiladas were fabulous - kind of a mix of my usual sour cream enchiladas and red sauce enchiladas. We put meat in ours (the recipe called for black beans) but I think they would be awesome vegetarian style too.


Carter and his smoothie. He actually ended up not liking it and asked for juice. What?! Anyone who knows me knows that I looove pina colada smoothies and I spend entire vacations by the pool consuming them. Ah, good Hawaii memories. Oh well, more for me!

Ay caramba! Of course, no evening would be complete without a major wrestling match with Dad! Yep, Carter has on a pillowcase cape. He's Xander, the green Power Ranger! FYI, we've had a much better week. We have the old Carter back, I think. At least until the next phase rolls through...
Oh my, how I love these four boys! Thanks for a fun night.

Good job on such a yummy dinner. I'll definitely give those enchiladas a try. I can't believe Carter didn't go for the smoothie! I love the after dinner wrestle. Patrick looks very out numbered. You'll have to make this a Cinco de Mayo tradition.

I forgot to say that I like all the haircuts! Owen needs one sooo bad. I just got mine done last week, it's super cute and blonde.

Cute boys! Way to go with the full on dinner! You'll have to send the recipe. I love any good Mexican food! Carter has grown a foot since I last saw him! Your kids grow up too fast!

Yummy! Good job on the food and celabration. We didn't do anything because I was at the gym until 6:45 PM. I am now obsessed with Yoga and pilates and have to go Mon-Fri.

Hey, thanks for giving the vegetarian version some consideration! The only way to go. I'm with Carter though....not on the smoothie, but on the pina colada! I'm definitely a strawberry banana daquiri (why doesn't this comment thing have spell check?)girl! Despite our differences, I still think we could work out a LOVELY day at the pool/beach with our drink of choice!

Okay - it happened again. I leave a comment and it didn't work. Strange. Fun celebrations! Scott decided to have a Cinco de Mayo party here too! We had limeade with lime slices on our glasses, guac, corn muffins and our old standby burrito since it was a last minute plan.

We can't wait to see you guys! It's been too long!

Yummy! All this food sounds so good! We had Dinosaur Chicken nuggetts that night! Yep- Gourmet! (is that how you spell it?) I can't believe those cute boys so grown up!
